I Tried One of Our Most-Saved Pasta Recipes—and It’s a Cozy One-Pot Dinner I’ll Be Making Again

Recently, I’ve been building up my collection of recipes, since I like to have some staple dishes that are easy to make during the week. Scrolling through different social media platforms can get a bit overwhelming when I’m searching for the recipes I’ve saved. Luckily, using the MyRecipes feature has been a real game-changer.

One of the dinner recipes I recently saved was our Baked Creamed Spinach Pasta. This dish was one of the most-saved recipes in March, so I knew it had to be worth trying. And as a big pasta fan, it really didn’t take too much convincing for me to add this to my menu.
Baked Creamed Spinach Pasta
The dish was super simple to prepare, starting with the easiest step of cooking whole-wheat pasta. The base of the sauce features a delicious blend of cream cheese, Parmesan, and nutritional yeast, plus lemon zest, salt and nutmeg. After I mixed those ingredients together, I gradually whisked in 2 cups of half-and-half.
Next, I moved on to cooking the spinach, heating oil over medium-high heat before adding in my minced shallot and garlic. I let that cook until it was fragrant, and then stirred in the spinach until it was completely wilted. At this point, I almost forgot to add in the 2 tablespoons of flour, but fortunately, I remembered at the last second. The flour helps thicken the sauce, so it was important to include it.
Finally, it was time to assemble the dish by combining the pasta with the cooked spinach and cream cheese mixture, plus some mozzarella. I couldn’t resist sampling a bite before covering it with foil and popping it into the oven, and it only made me more eager to dig in once it finished baking. One thing that stood out to me when I decided to make this dish was that it takes only 20 minutes of active cooking, so I didn’t have to spend a ton of time in the kitchen. It was a perfect choice for a busy Monday night, since I was able to get some other tasks done while it baked.
Twenty minutes later and my pasta was ready to go. I removed it from the oven and took off the foil to reveal a creamy, bubbly dish that looked absolutely delicious. The cheesy sauce clung to the pasta, and the garlicky spinach added a pop of color. It was a simple, cozy and delicious dish, exactly what I was looking for on a busy weeknight. It definitely deserves its title as one of our most-saved recipes, and it has earned a permanent spot in my recipe collection, too!
