Get ready for summer! Our punchy, tangy and refreshing Whipped Raspberry Lemonade is about to become your new warm-weather beverage. Creamy coconut milk, fiber-rich raspberries and antioxidant-packed lemons are the stars of this yummy drink. They are whipped together with a lemon simple syrup that packs a big citrus flavor. These are the key tips we learned while developing and testing this recipe in our Test Kitchen to make sure it works, tastes great and is good for you too! 

  • We chose frozen raspberries because they create a thicker texture while preserving the fresh fruit flavors. Using fresh raspberries would require more ice for a thicker consistency, which would dilute the flavor.
  • For the best texture, we suggest adding the liquid ingredients to the blender first, followed by the frozen ingredients. The liquid helps create a vortex that pulls in the frozen ingredients.
  • You can swap lemon juice for lime juice to create a limeade, or enhance the lemon syrup by adding an herb like thyme or a spice like coriander.

Nutrition Notes

  • Full-fat coconut milk comes in a can and must be shaken to mix the solids and liquid together. Coconut milk gives this recipe a thick and creamy consistency, but it is high in saturated fat. You can decrease the saturated fat in this recipe by using light coconut milk in a can or refrigerated coconut milk, found by the plant-based milks in the dairy aisle of your grocery store. 
  • Frozen raspberries are nutritionally identical to fresh raspberries, since they are flash frozen soon after they are picked. They are high in fiber and rich in anthocyanins, which are antioxidants that give them their bright red color.
  • Lemons are used twice in this recipe, which means double the nutritional benefits. The peel of the lemon contains essential oils and flavonoids—antioxidants that can help protect cells from damage. The juice of the lemon is high in vitamin C, which boosts immune health and helps lower inflammation.
